Creamy vegan mac and cheese

This creamy vegan mac and cheese combines tender macaroni with a smooth, savory dairy-free cheese sauce. Vegan cheddar, cream cheese, plant milk, and vegan Parmesan make the sauce rich and creamy, while gentle heat helps everything melt together smoothly. Add previously roasted garlic for an optional savory twist.

Ingredients

  • 6 cups dry elbow macaroni
  • 3 tablespoons vegan butter
  • 15 ounces vegan cheddar finely chopped or shredded
  • 10½ ounces vegan cream cheese preferably softened
  • 1½ cups plain unsweetened almond milk
  • 1½ batches vegan Parmesan
  • 1 tablespoon garlic powder
  • 1½ teaspoons onion powder
  • 1½ teaspoons black pepper or to taste
  • ¾ teaspoon smoked paprika optional
  • Cloves from 1 small head previously roasted garlic mashed, optional

Equipment

  • Colander
  • Large pot
  • Large saucepan
  • Wooden spoon or silicone spatula
  • Measuring cups and spoons
  • Cheese grater or knife, if needed

Method

  1. Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package directions until al dente. Before draining, reserve about 1 cup of pasta cooking water; you'll only add as much as needed to loosen the sauce. Drain the macaroni without rinsing.
  2. While the pasta cooks, melt the vegan butter in a large saucepan over low heat.
  3. Add the vegan cheddar a little at a time, stirring gently and allowing each addition to soften and melt before adding more.
  4. Add the vegan cream cheese and stir over low heat until incorporated. If using the optional previously roasted garlic, stir in the mashed cloves at this point.
  5. Pour in the unsweetened almond milk. Add the vegan Parmesan, garlic powder, onion powder, black pepper, and optional smoked paprika. Stir gently until the sauce is smooth and creamy. Keep the heat low and do not allow the sauce to boil.
  6. Add the drained macaroni to the cheese sauce. Stir until the pasta is thoroughly coated, then cook over low heat for 1 to 2 minutes.
  7. If the sauce is too thick, add reserved pasta water a small splash at a time until it reaches your preferred consistency. Remove the pan from the heat while the sauce is still slightly loose, since it will thicken as it sits.
  8. Serve warm.

Notes

  • Plant milk: Use plain, unsweetened plant milk. Avoid sweetened or vanilla-flavored varieties.
  • Vegan cheese: Melting performance varies by brand. A vegan cheddar designed for melting works best.
  • Heat: Keep the sauce over low heat. Excessive heat can cause some vegan cheeses to become oily or grainy.
  • Consistency: The pasta absorbs sauce as it sits, so don't worry if the finished sauce initially looks a little looser than you want.
  • Roasted garlic: Use garlic that has already been roasted and cooled. Roasting time is not included in the listed prep, cook, or total time.
  • Gluten-free: Use gluten-free macaroni and verify that your packaged ingredients are certified gluten-free when necessary.
  • Storage: Refrigerate leftovers in an airtight container for up to 4 days.
  • Reheating: Reheat gently with a splash of unsweetened plant milk to restore the creamy consistency.
  • Freezing: Freeze in an airtight freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
