Ingredients

  • ½ cup vegan butter melted
  • 1½ cups granulated sugar
  • ⅓ cup unsweetened non-dairy milk
  • 3 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup vegan chocolate chips

Equipment

  • 8×8-inch baking pan
  • Parchment paper
  • 2 mixing bowls
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Wire cooling rack

Method

  1. Prepare the oven and pan. Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving enough overhang on the sides to lift out the brownies later.
  2. Combine the wet ingredients. Add the melted vegan butter and granulated sugar to a mixing bowl and whisk to combine. Add the non-dairy milk and vanilla extract and whisk again until evenly mixed.
  3. Mix the dry ingredients. In a separate bowl, whisk together the flour, cocoa powder, espresso powder, baking powder, and salt. Break up any visible lumps of cocoa.
  4. Make the batter. Add the dry ingredients to the wet mixture. Stir with a spatula just until no dry streaks of flour or cocoa remain. Avoid continuing to mix once the batter comes together.
  5. Add the chocolate. Fold in the vegan chocolate chips until evenly distributed throughout the thick batter.
  6. Fill the pan. Transfer the batter to the prepared baking pan. Spread it evenly into the corners and smooth the top with a spatula.
  7. Bake. Bake for 25–30 minutes. The edges should look set and the center should no longer appear like raw batter. A toothpick inserted near the center should come out with moist crumbs rather than completely clean.
  8. Cool. Let the brownies cool in the pan for about 30 minutes. Lift them out using the parchment paper, transfer to a wire rack, and cool completely before cutting into 16 squares.

Notes

  • Don't overbake: These brownies continue to set as they cool. A few moist crumbs on a toothpick are what you want for a fudgy center.
  • Measure flour carefully: Spoon the flour into the measuring cup and level it rather than packing it into the cup.
  • Cocoa powder: Use unsweetened cocoa powder, not hot cocoa mix.
  • Chocolate chips: Check the ingredient label to make sure your chocolate chips are vegan.
  • Espresso powder: It strengthens the chocolate flavor rather than making the brownies noticeably coffee-flavored. You can omit it if preferred.
  • Non-dairy milk: Unsweetened almond, soy, or oat milk can be used.
  • Cooling matters: Cutting the brownies while they're hot can make the soft center look underdone. Letting them cool gives the crumb time to set.
  • Storage: Keep completely cooled brownies in an airtight container at room temperature for up to 4 days, or refrigerate them to keep them longer.
  • Freezing: Wrap individual brownies well and store them in a freezer-safe container. Thaw at room temperature while wrapped.
